This is a recipe from one of my friends who just recently moved to Korea, I felt that it was too good not to share.
*I’ve made the recipe a few times and have had great success however I did make it once with store bought lemon juice instead of using real lemons and you could barely taste the lemon flavor. I suggest if you are going to use the store bought lemon juice I would use a little more than double what the recipe calls for.
Crust:
2 sticks of butter or margarine
2 cups flour
½ cup sugar
Mix together and press into 9 x 12 ungreased pan. Bake for 20 minutes at 350 degrees then let cool.
Filling:
2 cups sugar
4 eggs
4 tbs flour
1 tsp baking powder
Pinch of salt
6 tbs lemon juice
Pour on crust then bake for 25 minutes at 350 degrees or until lightly brown. Cool. Add powdered sugar on top.
